Looking for healthy soup ideas? Try making this quick chickpea vegetable soup. This soup is definitely my number one favourite for Ariel. Ariel loves soup and obviously no complaints here as its packed with so much nutrients not to mention tastes so delicious! The chickpeas is the the star of this chickpea vegetable soup and is extremely high in protein and fibre, so if you are looking for a meat replacement and filling give this a go. Apart from all the nutritional benefit this this is obviously quick to make. You can even make them in batches if you have enough freezer space and freeze for up to 3 months.

Chickpea Vegetable Soup

This recipe is extremely fool proof anyone could do it. I usually use fresh veg however the frozen ones taste just as good, not to mention save cooking time! Yassss 🙂 the prep time is based on using fresh veggies.
